Why it stays with you

Hiroshima okonomiyaki is not mixed but layered, and layering takes a practiced hand. A thin crepe of batter, a hill of cabbage, soba or udon, pork and egg are stacked on the griddle in order, then turned in one movement. OKOSTA puts that handwork in the most convenient place there is, inside the JR Hiroshima Station building, where guests cook their own under an artisan's eye.

The value is depth with no barrier to entry. A group arrives without friction, and the visit drops into an itinerary before or after a meeting, but the session is not perfunctory. An artisan coaches each guest through the layering and the turn, the whole sequence is done by hand from batter to plate, and the okonomiyaki is eaten hot. Rarer still, the program accounts for the reality of international groups: halal, vegetarian and gluten-free options mean nobody is left watching the others cook.

When a team carries mixed dietary needs and the schedule is full, OKOSTA gets everyone cooking and eating what they made without leaving the station. A shared experience that leaves nobody out is exactly what a team reward is looking for.
